Ingredients:
100 g smoked tofu
about a normal-sized (breakfast cereal-type) bowl of fresh spinach (I realize that's not a normal measurement, but I rinse spinach by putting some in a bowl and pouring cold water on it and letting it sit for a bit)
1 pear
lemon juice, black pepper, salt for seasoning
goat cheese
cook pasta (enough for one person)
Cook the pasta if you haven't already done that (this is excellent if you want to use up leftovers). Cut the tofu into bite-sized chunks. Heat olive oil in a frying pan. Put tofu plus pears in frying pan, season with salt and pepper, fry it for a while on medium heat until the tofu is looking crisper and the pears are a little darker, then add lemon juice, then the rinsed spinach and keep stirring until it wilts. Add pasta, fry a little more, put in a bowl, add crumpled goat cheese and potentially more lemon, enjoy.
I do not have a camera or I would show you--it looks as good as it tastes. And god, it's so easy.
