Ingredients:
For the sauce/marinade:
half of a small red onion
ground white pepper
salt
some red wine (cooking wine, whatever)
a couple of tablespoons of olive oil
about two teaspoons worth of finely chopped fresh ginger
one tablespoon of mustard--the kind with actual mustard seeds etc. (this is optional, but it worked really well)
fresh basil (other fresh spices would also work)
about a normal-size bowl full of leafy greens (whichever kind you like)
half an avocado
enough meat or tofu for one person (I used pork, because it is cheap)
quinoa (tip: make double what you need and then you can combine it with some cheese (like goat cheese or feta or even parmesan--something salty), the other half of the avocado and some canned beans for a delicious lunch)
Prepare the quinoa according to the directions on the package. Rinse your greens. Chop the ginger and the onion, shred the basil leaves, and mix the ingredients for the sauce together in a bowl. Turn on the burner for the frying pan. Cut the meat or tofu into bite-sized pieces, put it in the sauce bowl and stir, making sure the meat/tofu is coated. Fry it until it is finished. When the quinoa is done, mix in the rinsed greens and chop the avocado into bitesized pieces. Mix together. Eat.
